Dean, he's gonna be fine!


We're racking up the injuries now!! So far he has nailed his pants to his leg with a nail gun. (I told him to just use a belt and that would keep his pants up!) Then he fell through the barn roof we were tearing down and drove a nail into his hand. Now, he was cutting a metal tube in half and the blade snapped and came back and hit him in his eye. His eye is OK and he is going to be just fine.
(I hope I can keep him in one piece to see him graduate!)

Crazy Dog

It's not an easy task to take a picture of this dog. You see, my boys received laser lights for Christmas one year to torment our dogs with. Macy was the only one willing to play along with the game. Now she responds to any flash of light! No matter the source. Her tongue hangs out, she starts drooling, and gets a crazy look in her eyes!
Shut the flash off you say?

I tried, and she's too smart.

You see, she associates the beep on my camera once the photo is in focus with her light source!

I never thought of that! Maybe Macy can read the manual and tell me how to do it :)




I don't really think she would want to.




She's too busy chasing reflections from the sun beaming off silverware and watches, things like that! She's a crazy dog!

Cold snap over?

Well I am thankfull to report that our cold snap is snaping out of it! I actually spent some time cleaning up the barn yesterday! Maybe I'll get out for a walk with Timothy.

What a gentle sweet goat she is....a real lady goat :)

Southwestern Crockpot Breakfast

From the Mr. Breakfast.com Collection
18 Eggs
1 small can green Ortega chillis
1 lb. cooked breakfast sausage
2 1/2 cups grated Monterey Jack or Pepper Jack cheese
1 Med. Onion diced
1 green pepper diced
1 tsp. butter
Grease entire inside of crockpot with butter. Layer sausage, chillis, onions, peppers, and cheese, repeating the layering process until all ingredients are used and ending with a layer of cheese.
Beat eggs, then pour over mixture in the crockpot. Cover and cook on low for 7-8 hours. Serve with sour cream or fresh salsa.
The smell you wake up to is unbelievable..........

Whose woods these are I think I know.
His house is in the village though;

We visited some dear friends Thursday night, and had sweet fellowship . We were blessed to visit with them, and was blessed with this sighting of deer in their front yard !

This is a common occurrence for our friends! They are so blessed!!





Penne with Spinach Sauce

I think I've mentioned before that we don't get cable at our house. We live out of the area. So no Food Network for me. How have I survived?
When I took Acelia in for her piano lesson Barbara had Food Network on so I got really comfortable on the couch with a cup of tea and got a quick fix.
This is the result..........
1 pound of penne
3 garlic cloves (a little much for me I would cut this down to one or two)
2 oz. of cream cheese
1 oz. of goat cheese (I just used 3oz. of cream cheese)
3/4 tsp. of salt
1/2 tsp. fresh pepper
1 bag of baby spinach
Lot's of Parmesan cheese
Cook pasta according to the directions. While pasta is cooking.....Add cream cheese, goat cheese, salt, pepper, and 1/2 the spinach leaves to a food processor and blend till smooth and creamy. Set aside till pasta is done. Continue with directions below.
Add 1/2 the spinach to a large bowl
When pasta is done, drain (reserve 1 cup of the pasta water) and put cooked pasta on top of spinach leaves.
Add the spinach puree and mix till pasta is coated, add a little water at a time till pasta is smooth and creamy. Top with lots and lots of Parmesan cheese and enjoy!
Talk about comfort food. :)

Whats Cooking?

Homemade Bread!
4 Cups of warm water
3/4 Cup sugar
3 Tbl. yeast
2 tsp. salt
4 Tbl. oil
5 Cups (or more) of Flour
Put warm water in large mixing bowl, sprinkle yeast on top then sprinkle sugar on top of yeast and water. Let stand for 10 min. Add oil, salt, and flour. Mix until the dough is smooth and elastic like. (Sometimes I need to add some more flour to get my dough the right consistency) Let rise 1 hour, punch down and put in bread pans greased with BUTTER. I've tried Crisco and Yuck, Yuck!! Please use butter :) Let rise in pans 30 min. or so and bake at 350 degrees for 50 min.

Pumpkin Chip Muffins!
4 eggs
2 Cups Sugar
1 1/2 Cups Oil
1 Can of pumpkin
2 Cups flour
1 1/2 Cups of bran
1 1/2 Cups of unsweetened coconut
1 tsp. salt
2 tsp. baking soda
2 tsp. baking powder
1 tsp. Cinnamon
Chocolate chips to your liking. ( we like the chocolate chunks)
Mix eggs, sugar, oil, and pumpkin. Then mix all dry ing. Add the dry ing. to the wet pumpkin mixture and mix well. Add Chocolate chips. Bake at 350 for 30 min.



And look what we found in the hen house earlier this week!! Our first egg.:)

Movie Night!

Friday night was movie night on the farm. I made homemade pizza, my niece joined us and brought the chips, "Horton Hears A Who", and this blue ball....... Y'all know what it is?
An ice cream maker!!!

We filled the inner part with heavy whipping cream, vanilla, and sugar. Then filled the outer part with ice, and rock salt, then started shaking the ball..........

Between them all they got the job done, and now comes the moment we all shook for!!
The ice cream was sooooo creamy and very rich, my niece and I decided next time we would use half n half :) It was delicious though!









This is what I chose to do with my portion of the goods. It tasted just like an orange creamcicle! Yum!!! :)

Horton Hears a Who was really cute we all loved it. We watched Wall-E after, also a very cute movie.
