Vegetables and Pasta

I thought I would share a few photos that I snapped at 5:30 pm this evening. They say if you don't like the weather in New England wait a minute :) This is quite a change from yesterday!






Well that is enough of that........ Here are my favorite cookbooks. I buy cookbooks and make a few recipes out of them and they go on the shelf. Not these!!
I know I am suppose to be Italian :) I'm not though so I have to pretend. When decorating my home I tried to follow an Italian theme. When cooking, my favorite is Italian!!

Here are my three favorite cookbooks. I have made everything that is in one of the cookbooks. The following recipe is from the Everyday Italian cookbook and keeps appearing on my table. Its quick easy and everyone loves it.
Go to the store and buy your favorite vegetables. Here is what I used this time (every time I use something different)1 Zucchini, 1 summer squash, 1 sweet onion, and sm. pkg. of mushrooms (the mushrooms didn't fit on the grill at this time :)
I cut the vegetables up about 1/4" thick, except the mushrooms I cut in half. I put them all in a big bowl and cover them with olive oil. Then I put in about a tablespoon of Italian Herbs and mix so they are all covered well. I also sprinkle 1 tsp. of salt and the same with pepper.
I grill them about 3-5 min on each side. I like them a little crunchy.

I put the mushrooms on the grill when the first batch of vegetables were all done.

All done and ready to eat!!

Put a pot of spaghetti on to boil. Do this step first so everything is done at the same time. :)

The sauce I keep really simple. A 28 oz. can of crushed tomatoes, a tablespoon of balsamic vinegar, a tablespoon of lemon juice, a clove of crushed garlic, salt, and pepper. I usually throw in 2 teaspoons of Italian Herbs too.

Sometimes I just put the vegetables on my plate and put the sauce on top, sprinkle with fresh Parmesan cheese, or I put the vegetables on some spaghetti, top with sauce, and cheese. Either way it is delicious.

Hope everyone had a great week :) Acelia and I are off to the city tomorrow for some mother, daughter time and shopping before she goes to Georgia with her daddy. The Father Daughter Retreat is less than a week away!! :o

ACK!!! Look at that snow. It's pretty though.

The veggies look yummy. That seems very simple and yet tasty. I'll have to give it a try. Thanks for sharing :-).

The snow looks beautiful but I'm sure glad I'm here in sunny NC and not back there in cold, snowy, Maine.

Your dinner looks great! I agree with your other blogger's..any leftovers???
