Signs of Spring



Four Little Foxes

Speak gently, Spring, and make no sudden sound:

For in my windy valley, yesterday I found
New~born foxes squirming on the ground-
Speak gently.



There weren't exactly 4, and they weren't new born. Actually, they are just about ready to leave their mother!



My husband took me North a little ways to see and photograph some baby foxes and their mother. They were so cute. They are living in a rock wall at a camp that he built. It is currently getting some remodeling from another contractor and these "kits" are are comfortable with the construction taking place around them.

Mother keeps a close eye on things though!!














One of the babies finally realizes we are there!



It doesn't seem to deter them from their "play time"








I couldn't help thinking about my chickens!!

I really wanted to go home and close the chicken coop door!!








They are really cute, aren't they?

100% Whole Wheat Rolls

I made these rolls yesterday. I am trying to incorporate more whole grains into my diet. These rolls are 100% whole wheat with no white flour, no sugar and are made with olive oil ! I need to make these one more time before I post the recipe. (I didn't measure my flour)
They came out light and fluffy!

Salty Fix

I have found on this diet that I need my craving's satisfied and this one fixes that salty potato chip craving. I am big on bold flavors. This was an experiment, and next time I will have to perfect the amounts. For now this is what I did.
1 1/2 Cups of Walnuts
1 1/2 Cups of Almonds
4-5 Tbl. of "Braggs Liquid Amino's"
cayenne pepper
I mixed these up really well giving the Amino's time to cover each almond or walnut, then I dumped them onto a baking sheet in a single layer, and added a sprinkle of Cayenne pepper. Bake at 250 for 20-30 min. stirring twice.

These did taste really good, but next time I think I would add maybe a little more bragg's and defiantly more cayenne! You can add what ever seasoning to suit your taste buds.

English Muffin's

I'm not sure what to call these, but the idea came from my sister Denise!
I use an english muffin that is 100% flourless sprouted whole grain.
They are made by "Food For Life" called "Ezekiel 4:9 english muffins" found in the frozen section in the health food section of the grocery store.
I have bought these at health food stores and Shaw's



I toast the muffin in the toaster
spread a generous amout of Avacado Mayo on the bottom
add a slice of tomato
grind some fresh pepper
a sprinkle of salt
top with some cheddar
(This morning I added thin sliced onion)
Place under the broiler till cheese is melted!!
YUMMY!!

If At First You Dont Succeed..........

Try try, keep on trying, and try again!!!
A few weeks ago I checked this book out from the library, recommended by a good friend of mine.
My goal, no white sugar, no white flour, and (now that I read into the book a few chapters) no white potato! Help!!
I've gone off of all these before only to ditch the diet and go back to my normal way of eating for several reason's.....
1. I have 5 others in the house not interested in joining me. (I wonder why!!??, This also means making two meals most of the time)
2. Almost everything you eat is made from scratch. (Time consuming!)
3. It wasn't fulfilling my taste buds!! (Pretty important to me)
So, here I am again, cholesterol high, history of heart disease and cancer in my family, and a 40th birthday on the horizon!! Time to take some control and get serious!!
I love the book. It's easy to read and understand and his book is based on years and years (20+) of research.


Ok, so here is my first, gotta have in the fridge all the time staple!! It was actually out of desperation I made this. I had cut my avocado and put it in the blender only to realize I didn't have the original recipe! Not wanting my Avocado to turn brown I threw what I thought was in the original. This came out and I love it even more than the original !!!



Avocado Mayo

1 ripe Avocado
1 Tbl. cider vinegar
1 Tbl. lemon juice
1/4 Cup of Olive Oil
pinch of salt
pepper
1-2 cloves of garlic (depends on how much you like garlic)

Put all ing.(except the Olive Oil) into the blender or food processor and blend (drizzling the olive oil in till gone) till creamy.

This is so versatile, you can add herbs or cayenne pepper or any other seasoning to it. Spice it up or leave it plain. As you can see above, I mixed chopped cucumber and chicken and added a little of the Avocado Mayo to it, and put it in a "Joseph's" whole grain's pita pocket.

After a few days the Mayo may turn a little in color but should last for a week in your fridge in an air tight container.

Spring Turkey Hunt 2009

Peanut Butter Fudge Pops

I bought a magazine the other day.......



There were so many yummy looking recipes.........



It's my new favorite magazine........


I think my family is going to love it!!!!!

From "Celebrate Summer"
Chocolate~Peanut Butter Pops
Makes 8~12 Servings
1(3.9~ounce) package chocolate~fudge instant pudding mix
2 1/2 Cups of Milk
1/3 cup creamy peanut butter
Ina large bowl, whisk pudding mix and milk together until thickened.
In a microwave safe bowl, heat peanut butter in microwave for 30 sec. till warm
Stir well, and add to pudding stirring well to combine.
Fill ice pop molds with pudding mixture.
Freeze for at least 4 hours or overnight.

Coffee Break!!





My mother worked as a cook at a logging camp, feeding 40 men everyday 5 days a week! I feel like I'm cooking for 40 men ! Thankfully I have the greatest mother that ever lived and she is here to help me feed my 4 men!


My boys are all done their school year and are now employed full time by my husbands company!! They are learning to build log homes! They are also spending from morning till evening with their father, something that has brought them closer and they are having the time of their lives!!


So what does all this mean? 4 lunches a day for 5 days and sometimes 6!! I no longer have leftovers and when I do, I don't have enough leftovers to make 4 lunches!! This is where my mother's cooking experience comes in.


The above picture is her cinnamon buns she used to make for the men who worked in the woods. 8 dozen to be exact! She whipped these up and I cooked them off, put them in freezer bags and into the freezer they went. Now my men have a nice treat for coffee break! Coffee and Meme's cinnamon buns!!


If possible I will get the recipe out of her and post it for you. She cooks the old fashioned way.....throw in what looks and feels good, mix it up, and cook it!! No measurements!!! It always comes out amazing!!
