A New Find
Ok, ok, I confess.......I am a lover of books! I was surfing around on Amazon and I scrolled over this.......


I love, love , love Beatrix Potter, and because I already have too many books on my "List of books to read this year" , I thought, "What's one more....or two, or three, or SIX!!" There are six books in this series and I want to read them all!!!!!
Something for the dogs

Acelia and I have been busy in the kitchen again! This time stirring up something for the pooches!
Peanut Butter Bonanza

2 cups whole-wheat flour
1 cup rice flour
1/2 cup brewers yeast
1/4 cup wheat germ
1/2 cup dry powdered milk
3/4 cup smooth peanut butter
1/4 cup canola oil
2 eggs beaten
1 cup water
Preheat oven to 325 degrees. Combine the wheat and rice flours , yeast, wheat germ, and powdered milk. Cut in peanut butter. Add the oil, beaten eggs, and water. Combine the mixture with your hands.
Roll out to 1/4 inch thickness and cut out treats using dog bone cookie cutters. Bake on an ungreased cookie sheet or parchment paper for 14 min.
Return the treats to the cooling oven to harden overnight.
This recipe makes 3-5 dozen healthy treats. Store leftovers in an airtight container.

Counting Down

In exactly 18 days my hubby and I are starting the P90X Extreme Home Fitness program. We have all our equipment and the attitude to "bring it" as Tony says. We're looking forward to starting. Only one thing may get in the way.....this flu that is running rampant through the house. Back and forth, hitting everyone in its way, and some of us twice!
Corn Casserole

From "Celebrate Summer"
4 Tablespoons unsalted butter
1 1/2 cup chopped red bell pepper
1 cup chopped green onion
2 jalapenos, seeded and chopped
1 (8oz.) package cream cheese, softened
1 (8oz.) package Monterey Jack cheese, cubed
1 cup sour cream
2 (16oz.) packages frozen whole kernel corn, thawed
1 (16oz.) package frozen white sweet corn, thawed
1 (16 oz.) package bacon, cooked and crumbled
1/2 tsp salt
1/2 tsp ground black pepper
1/4 tsp ground red pepper
2 cups crushed potato chips
Preheat oven to 350 degrees
In a large skillet, melt butter over medium-high heat. Add bell pepper, green onions, and jalapenos; cook for 5 to 6 minutes, stirring occasionally, or until vegetables are tender. Add cream cheese, Monterey Jack, and sour cream, stirring until cheeses are melted. Remove from heat, and stir in corn, bacon, salt, black and red peppers until mixture is combined. Spoon into a 13 x 9 inch baking dish, and top with crushed potato chips. Bake for 30-35 min, or until hot and bubbly
Note: I didn't have a skillet big enough to hold all of the ingredients, so I melted the cheese and then put it in a huge bowl and mixed in the rest of the ingredients.
Three-Cheese Macaroni
From "Celebrate Winter"

6 Tablespoons of butter
1/2 C all purpose flour
1 quart half and half
2 C grated Gruyere cheese
2 C grated white cheddar cheese
2 C grated Parmesan cheese
1/2 tsp ground white pepper
1/2 tsp. ground nutmeg
1/2 tsp salt
1 pound elbow macaroni, cooked
1 1/2 cups bread crumbs
2 tablespoons of butter, melted
1 tablespoon parsley flakes
Preheat oven to 350 degrees. Lightly grease 9x13 pan.
In a large saucepan, melt butter over medium heat. Add flour; cook for 2 minutes, whisking constantly. Gradually add half and half, whisking until smooth. Remove from heat; add cheeses, white pepper, nutmeg, and salt, stirring until cheeses are melted. Add macaroni, stirring well. Spoon macaroni mixture into prepared dish.
In a small bowl, combine bread crumbs, melted butter and parsley flakes. Sprinkle bread crumb mixture evenly on top of macaroni. Bake for 15-20 minutes, or until browned and bubbly.
I didn't use the bread crumbs (because I didn't have any) and it was still yummy!!

Acelia had fun making some fancy napkin rings for next years Thanksgiving and Christmas dinner!




Snowman Banner
Four out of six of us are sick! The flu has hit! Some are in bed with aches and pains along with a horrible cold. Others are just gaining the courage to sip ginger ale. It isn't pretty. So while we are down and out, and running around waiting on the sickly, I thought I would put some posts up that have been held up on my hard drive.

I made this cute snowman banner! It is strung right across my dirty windows in my dining room. With below zero temperatures and the wind howling my windows will stay dirty till the temperatures rise to balmy conditions! 75 degrees would be nice. :)

This idea came from the new issue of "Celebrate"

Chocolate Cappuccino Cookies

Chocolate Cappuccino Cookies
(From Gooseberry Patch Christmas, special magazine)
2 c. butter or margarine, softened
4 c. brown sugar, packed
4 eggs
5 1/2 c. all~purpose flour
1 c. baking cocoa
1/4 c. instant coffee granules
1 t. baking powder
1 t. baking soda
1 t. salt
10~oz. pkg. cinnamon chips
Beat butter until creamy. Gradually add brown sugar, beating well. Add eggs, beating until blended. Combine flour and next 5 ingredients. Gradually add to butter mixture, beating at low speed just until blended. Stir in cinnamon chips. Drop dough by rounded tablespoonfuls, 2 inches apart, onto lightly greased baking sheets. Bake at 350 degrees for 8 to 10 minutes. Remove to wire racks to cool completely.
Makes 8 dozen!!!
This is a huge batch of dough. Just the cookie recipe for the crew I feed. I think this dough could be frozen in rolls to use later if you didn't want to cook them all off at once. I was a little skeptical of the cinnamon chips, but these were really good!! This is definitely going in the "bake again and again" file!! :) Enjoy!!
