
Chocolate Cappuccino Cookies
(From Gooseberry Patch Christmas, special magazine)
2 c. butter or margarine, softened
4 c. brown sugar, packed
4 eggs
5 1/2 c. all~purpose flour
1 c. baking cocoa
1/4 c. instant coffee granules
1 t. baking powder
1 t. baking soda
1 t. salt
10~oz. pkg. cinnamon chips
Beat butter until creamy. Gradually add brown sugar, beating well. Add eggs, beating until blended. Combine flour and next 5 ingredients. Gradually add to butter mixture, beating at low speed just until blended. Stir in cinnamon chips. Drop dough by rounded tablespoonfuls, 2 inches apart, onto lightly greased baking sheets. Bake at 350 degrees for 8 to 10 minutes. Remove to wire racks to cool completely.
Makes 8 dozen!!!
This is a huge batch of dough. Just the cookie recipe for the crew I feed. I think this dough could be frozen in rolls to use later if you didn't want to cook them all off at once. I was a little skeptical of the cinnamon chips, but these were really good!! This is definitely going in the "bake again and again" file!! :) Enjoy!!
