Three-Cheese Macaroni

From "Celebrate Winter"

6 Tablespoons of butter
1/2 C all purpose flour
1 quart half and half
2 C grated Gruyere cheese
2 C grated white cheddar cheese
2 C grated Parmesan cheese
1/2 tsp ground white pepper
1/2 tsp. ground nutmeg
1/2 tsp salt
1 pound elbow macaroni, cooked
1 1/2 cups bread crumbs
2 tablespoons of butter, melted
1 tablespoon parsley flakes
Preheat oven to 350 degrees. Lightly grease 9x13 pan.
In a large saucepan, melt butter over medium heat. Add flour; cook for 2 minutes, whisking constantly. Gradually add half and half, whisking until smooth. Remove from heat; add cheeses, white pepper, nutmeg, and salt, stirring until cheeses are melted. Add macaroni, stirring well. Spoon macaroni mixture into prepared dish.
In a small bowl, combine bread crumbs, melted butter and parsley flakes. Sprinkle bread crumb mixture evenly on top of macaroni. Bake for 15-20 minutes, or until browned and bubbly.

I didn't use the bread crumbs (because I didn't have any) and it was still yummy!!
