Chicken Stoup


Well, I've been cooking up a storm here at the farm.  
My mother has had knee surgery and has come to stay for awhile.
I've been trying to make some comfort food, so yesterday I made "Chicken Stoup".
It's not soup and it's not stew.
It's both!
Somehow when I start these recipes, I deviate and end up with something totally different.
Here's what I did.....

Chicken Stoup

2 Cans low sodium chicken broth
1 onion diced
~Put these two ingredients into a stock pot and simmer until onions become soft~

In a frying pan, put .....

1 Tbl butter
1/3 Cup orzo
Toast the orzo until golden, then add...

3/4 Cup of brown rice
2 cans of low sodium chicken broth
Simmer until rice is cooked.
(This is Rice A Roni! Homemade! No preservatives! Shhhh don't tell anyone!)

I shredded some left over baked chicken (about 2 chicken breast) and threw that in the Onion/broth pot, then added 2 stocks of chopped celery, and laid about 4 handfuls of fresh snowpeas on the top of everything to steam.
Add your rice mixture, stir, and your done!!

I feel like I was up all night.  I had to switch the ice water in the little cooler that stays on her knee every 2 -3 hours.  So we're having a fireplace, PJ, coffee, comfort food, napping Netflix, day!!
