Apple Pancakes with Caramel Sauce

Apple Pancakes with Caramel Sauce
(From Recipe's For Healthy Living)


For the Pancakes....

1 apple, peeled, cored, and coarsely grated
2 eggs, or 1/2 cup egg white, or combination of the two
1 tsp ground cinnamon
Butter or oil

Using your hands, squeeze some of the juice from the grated apple
Beat the eggs in a bowl. Add the apple and cinnamon, and stir to combine
Grease and 8 inch, skillet
Pour the mixture into the pan making silver dollar sized pancakes
Cook until edges are golden then flip and cook other side until golden brown.

Top with warm honey, berries, yogurt

For the Caramel Sauce

1/2 cup Honey
1/4 cup butter (I used raw grass fed)
1/4 cup half and half organic cream (I used raw grass fed)

Bring Honey to a bil in a small pot over high heat
Boil for 2 to 3 minutes. Lower the heat to medium
Add the butter and stir until melted
Carefully add the cream. The mixture will bubble up. Continue to stir until the sauce is slightly thickened and coats the back of a spoon, approximately 2 to 3 minutes.
Place the entire pot in a bowl of ice cubes and continue to thicken as it cools.
Store in the refrigerator and re-warm to thin before using.  (I put mine in a container and placed that in a saucepan with a little hot water on the stove)
