Gourmet Pizza

My almond flour hasn't come yet, and David and I are really ready for something different to eat!
I took some of the almonds I bought at Sam's Club and ground them in my blender.
 Perfect!!

Gourmet Pizza
(From Recipe's For Healthy Living) 


I doubled this recipe and it made a nice size for David and I!

1/2 Cup almond flour
1 Tbsp grated Parmesan cheese
1/4 tsp. salt
1/2 tsp. dried basil
1/2 tsp dried oregano
1/4 tsp. dried thyme
1 tsp olive oil
1 large egg
Tomato Paste or sauce (GAPS approved only)
Pizza toppings
Parmesan cheese grated

Heat oven to 325. Line a cookie sheet with parchment and grease with olive oil.
Combine the almond flour, cheese, salt, dried herbs and egg in mixing bowl. The dough with resemble cookie batter.
Spread the dough thinly on the cookie sheet to a 6-8 inch diameter
Top with tomato paste or sauce
Spread on your pizza toppings and sprinkle generously with Parmesan cheese
Drizzle olive oil over the pizza
Bake for 18-20

{ You can make a pizza crust and freeze it for almost instant pizza. Make the dough and flatten it between tow pieces of parchment paper or plastic wrap until it is 6-8 inches in diameter. Place in freezer bag or something sealed so it doesn't get freezer burnt.  Don't thaw before baking just add the sauce and the toppings and bake at 325 for 20 minutes}


 The finished product! DELICIOUS!!!
